Now that I made Pumpkin Curry Soup using Carnation Milk, it was time to prepare a recipe from the Carnation Holiday Recipe Guide (download the PDF here). I chose two – the Mini Quiches, which we had for breakfast and the Pear Oven Pancake, which we enjoyed as a dessert.
I was very pleased with the results and will look into other ways to use Carnation Evaporated milk in other healthy recipes.
These mini quiches may be great for hors d’oeuvres, but they’re also perfect for breakfast. Make a batch the night before. Let cool, remove from the muffin tins, and store in a container. During the morning rush, put a couple on a plate and heat up in the microwave for a minute or so. It’s a yummy and healthy way to quickly start the day.
Ingredients:
1 can (12 fl. oz.) NESTLÉ® CARNATION® Fat Free Evaporated Milk
- 3 large eggs beaten
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 cups (8-oz. package) of shredded cheese such as cheddar
- 2 cups chopped, frozen broccoli, thawed and drained
- 1/2 cup chopped red bell pepper
Directions:
- Preheat oven to 350 degrees F.
- Grease and lightly flour 12 2 1/2-inch muffin cups.
- Whisk evaporated milk, eggs, flour, salt and black pepper in a medium bowl until blended.
- Stir in cheese, broccoli, and bell pepper.
- Spoon 1/4 to 1/3 cup of mixture into each prepared muffin cup, filing almost to the rim. Stir mixture frequently to evenly distribute ingredients.
- Bake for 23 to 28 minutes or until knife inserted near centers comes out clean and tops are lightly browned.
- Cool in pans for 15 minutes.
- Run knife or small, flat spatula around inside edges of muffin cups. Carefully remove quiches.
Tips:
- I used Wilton Cake Release
instead of greasing and flour each muffin cup. I find it works flawlessly for any baking project.
- Instead of using a traditional muffin tin, try Wilton Silicone muffin cups
, so you can just pop out the cooled quiches. Easy!
- Pat broccoli dry with paper towels to remove excess water.
- For variety, use different types of cheeses and veggies. Experiment with chopped up ham or caramelized onions.
- To make the quiches even healthier, I used 1 cup of cheese and added more red bell pepper and broccoli.
- To reduce fat, I substituted 3 egg whites for 1 egg.
- Instead of regular cheese, try a low fat version.
